The first time I made tteokbokki here, I bought a bag of frozen rice cakes and thawed them on the counter while I prepped everything else. By the time they hit the pan they had gone soft and slumped — more porridge than chew. That is the difference between rice cakes that are thawed and rice cakes that are soaked, and nobody tells you about it. So let’s start there.

Tteokbokki is Korea’s most beloved street food — chewy rice cakes in a glossy, sweet-and-spicy sauce. The good news for anyone cooking it in America: it needs only a handful of ingredients, most of which keep for months, and the whole thing comes together in about 20 minutes.

And do not soak them for hours “just to be safe” — over-soaked rice cakes fall apart in the sauce. If they bend slightly without snapping, they are ready.

For the dish: 1 lb (about 450g) tteok — cylindrical rice cakes, called garae-tteok; 2 cups anchovy-kelp broth (or water in a pinch); 2 sheets eomuk (fish cake), cut into triangles; 2 scallions, cut into 2-inch pieces; ½ onion, sliced; 2 boiled eggs (optional but traditional).

For the sauce: 3 tbsp gochujang (Korean chili paste); 1 tbsp gochugaru (Korean chili flakes) — adjust for heat; 1 tbsp soy sauce; 1½ tbsp sugar (or 1 tbsp sugar + ½ tbsp corn syrup for extra gloss); 2 cloves garlic, minced.

1. Soak the rice cakes in cold water for about 30 minutes (see above). Fresh, soft rice cakes can skip this.

2. Make the broth. Simmer a few dried anchovies and a piece of dried kelp in 2 cups of water for about 10 minutes, then remove them. This step is what separates homemade tteokbokki from the instant kind — but plain water still works.

3. Build the sauce. Whisk the gochujang, gochugaru, soy sauce, sugar, and garlic into the broth and bring to a boil.

4. Add and simmer. Add the drained rice cakes, fish cake, and onion. Simmer over medium heat for 8–10 minutes, stirring often so nothing sticks to the bottom. The sauce will thicken and turn glossy as starch releases from the rice cakes.

5. Finish. When the rice cakes are chewy and the sauce coats a spoon, add the scallions and boiled eggs and cook one more minute. Serve immediately — tteokbokki waits for no one.

💡 Tips That Make It Taste Right

Do not walk away. Rice cakes stick and scorch fast; stir every minute or two. ✅ Sauce too thin? Keep simmering — it thickens naturally. Too thick? Add broth a splash at a time. ✅ Balance the heat with sweetness; if it tastes harsh, another teaspoon of sugar usually fixes it. ✅ Popular add-ins: ramen noodles (making it rabokki), sliced cabbage, dumplings, mozzarella melted on top, or a handful of sesame seeds at the end. ✅ Leftovers harden in the fridge — reheat with a splash of water over low heat.

🇺🇸 Where to Find the Ingredients in America

Korean grocery stores (H Mart and local Korean markets) carry everything, usually with refrigerated fresh rice cakes near the tofu. Other Asian supermarkets typically stock gochujang, rice cakes, and fish cake as well. Regular American supermarkets increasingly carry gochujang in the international aisle — Costco and Trader Joe’s have carried it too. And nearly all of it is available online, including shelf-stable vacuum-packed rice cakes that keep for months in the pantry.

Substitutions when you are far from a Korean market: frozen rice cakes work fine (see the soaking note above). No fish cake? Leave it out or use imitation crab. No gochugaru? Use less — regular chili powder is not the same and can taste harsh, so lean on the gochujang for flavor instead.

Once you have gochujang and a bag of rice cakes in the house, this becomes a 20-minute weeknight meal. That is the real reason it is worth learning. 💛
